Easy Caramel Corn

For the same game night that I made the Savory Popcorn Snack Mix, I also decided to make Caramel Corn. This recipe is super easy and delicious. It is really sticky when you first make it, but after it gets to room temperature it has a perfect crunch to it.

Easy Caramel Corn

12 cups popped popcorn
1/3 cup butter
1/3 cup light corn syrup
1 cup packed brown sugar
1 TBSP molasses
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp vanilla extract

Combine butter, corn syrup, brown sugar and molasses in a medium saucepan. Bring mixture to a boil over medium heat. Cook for 5 minutes, stirring once.

Remove pan from heat and stir in baking soda, salt and vanilla.

In a large bowl, add popped popcorn. Pour the sugar mixture slowly over the popcorn and stir to coat.

Spread the popcorn in a large roasting pan or cookie sheet that has been coated with cooking spray.

Bake at 250 for 1 hour, stirring every 15 minutes.

Remove from the oven and stir to break up any clumps. Serve at room temperature.
