I always have Mondays off, so holiday Mondays always throw me for a loop. I headed out to do my weekly grocery shopping and the store was packed! On the upside, my husband was home so he and the little guy stayed home while I got to go grocery shopping on my own. I know all the moms out there appreciate the break that an hour of solo grocery shopping affords us.
My first stop was my local produce stand. I spent $48 on a TON of produce. My best score was 4lb cartons of strawberries for $3.49! That is an amazing price. I picked up two cartons and flash froze one carton. Yum!
I also stopped by Safeway to take advantage of some of their new Just for U pricing. If you aren’t familiar with Just for U, be sure to check out this post over at The Coupon Project (plus enter to win a $100 Safeway gift card).
I had Just for U pricing on O Organics milk ($4.49), bags of baby carrots ($0.79!), limes ($0.25) and organic bananas ($0.69/lb). I also had a $3 off $10 produce purchase. The Voskos were free from a Facebook offer a while back. And the chips were a request from the hubs. My grand total was $16.
So what am I making this week?
Breakfast and Lunch will be juice. I was getting tired of some of my regular recipes so I found so new ones to try out this week. The yogurt will be for snack.
For Dinner:
Monday: Steak and Beet, Carrot and Ginger Salad
Tuesday: Lemon & Rosemary Whole Chicken (in slow cooker)
Wednesday: Veggie Burgers & Sweet Potato Fries
Thursday: Chicken, Apple and Curried Couscous Salad

I have 2 lbs of Copper River Salmon I’ll be cooking up tonight. I wanted to make it yesterday but we ate too much other yummy stuff. I forsee some cold salmon salads in my future.
